Creamy Chicken Parmesan Pasta
Ingredients (Serves 2)
- Protein & Pasta: 2 boneless, skinless chicken breasts (cut into bite-sized pieces) 6 oz pasta (penne or fettuccine recommended) Salt (for pasta water)
- Aromatics & Vegetables: 1 tablespoon olive oil, 1 tablespoon unsalted butter, 1 small onion, finely chopped, 2 cloves garlic, minced, 1 cup mushrooms, sliced
- Sauce Components: 1 cup chicken stock, 1 cup heavy cream,½ cup grated Parmesan cheese, Salt and freshly ground black pepper, to taste
- Garnish: Fresh parsley, chopped (optional)
Instructions:
- Cook Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside.
- Cook the Chicken: Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper, and cook until golden brown and cooked through. Set aside.
- Sauté Aromatics: In the same pan, melt butter. Add onion and sauté until soft. Add garlic and mushrooms; cook until mushrooms are tender.
- Making the Sauce: Add chicken stock, scraping up browned bits. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and the sauce thickens slightly. Season to taste.
- Combine: Return chicken to the skillet. Toss in the cooked pasta and mix until well coated. Cook for 2-3 minutes to let the flavors blend.
- Serve: Plate the pasta, sprinkle with chopped parsley if desired.
